1 Can black eye peas (drained and rinsed)
1 Can shoepeg corn (drained
1/2 each of orange, yellow, red, and green peppers chopped
1 Jalapeņo pepper, finely chopped
1 Small red onion, chopped
1/2 cup chopped cilantro
3 cloves crushed garlic

1/2 C. canola oil
1/4 C. white wine vinegar
salt and pepper to taste

refrigerate overnight
serve with tortilla chips
