1 3-4 lb beef roast, 2 12 oz cans V-8 juice, 2 tsp garlic powder, 2 tsp celery salt, 2 tsp Italian seasoning, 1 tsp black pepper, 1 med onion. 4-5 potatoes 2-3 carrots or 11/2-2 cups baby carrots.

Pour first 12 oz can of V-8 juice in bottom of large crockpot. Add roast, fatty side up. Pour second can of V-8 over top of roast. Rough chop or quarter onion and add to roast. Sprinkle roast with spices. Depending on the size of your roast, add peeled potatoes and carrots. You can add at the beginning , or if you prefer the vegetables more firm, add after 4 hours. Cover and cook on high for 4 hours, turn roast, then cook on low for an additional 2 hours or until tender. Or cook on low for 8 hours or until tender.
