3 lbs unpeeled potatoes, 1 lb bacon, 2-3 tbsp flour, 3/4 to 1 cup cider vinegar, water, 1/2 bunch green onions, 1/4 cup chopped fresh parsley, and black pepper to taste.

Boil unpeeled potatoes until very tender. Let cool and peel. Cut in half lengthwise & then into quarter inch slices. Season with pepper and set aside. Cook bacon over med to low heat until fat is rendered and bacon is crisp. Drain bacon on paper towel. Reserve fat in pan. Stir flour into fat. Cook 1-2 minutes. Add vinegar, water, sugar, and green onions. Cook until slightly thickened, about 5 minutes. Let cool slightly then pour gravy over potatoes. Add crumbled bacon to taste. Add fresh parsley. Serve warm. You can also keep warm in crock pot.
