1 lb diced pork,1 large onion,4 minced garlic cloves,1 tsp cumin,2 Tblp of flour,1 whole tomato diced,8 green chilies skins and seeds removed, 2 jalapeņos,2 cups chicken broth, and salt to taste.

Directions:
In skillet brown pork, add diced onions, and garlic, set aside In same skillet add one or two tablespoons oil, brown flour in oil add chicken broth and make a roux. Stirring constantly until gravy thickens. Blend or chop tomatoes, green chilies and jalapeņos. Add pork,tomatoes, chilies, jalapeņo and cumin and salt to taste to gravy. Let it simmer for 2 to 3 hours on low to medium heat on stove top. (stirring occasionally) Put it in the fridge over night to let the flavors blend. You can use it right away if you choose.
