1 onion, chopped
3 cloves garlic, minced
1 Tbsp. olive oil
2 tsp. chili powder
1 tsp. dried oregano
1 (28 oz.) can crushed tomatoes
1 (10.5 oz.) can chicken or vegetable broth
1-1/4 cups water
1 cup whole corn kernels, cooked
1 (4 oz.) can chopped green chilies
1 (15 oz.) can black beans, rinsed & drained
1/4 cup chopped fresh cilantro
crushed tortilla chips
sliced avocado
shredded Monterey Jack cheese
chopped green onions

I added some cooked quinoa, 1 more can of black beans and 1 more cup of corn

Directions:
Directions:
1. In a medium stock pot, heat oil over medium heat. Saute onion & garlic in oil until soft. Stir in chili powder, oregano, tomatoes, broth & water. Bring to a boil & simmer for 5 to 10 minutes.

2. Stir in corn, chilies, beans & cilantro. Simmer for 10 minutes.

3. Serve soup in bowls & top with crushed tortilla chips, avocado slices, cheese & chopped green onions.
