1 cup plus 2 tbsp flour
1/2 cup sugar
1 tsp baking powder
1/8 tsp salt
Grated rind of 1 lemon
1/3 cup butter
1 egg - beaten
1/2 cup raspberry jam

Directions:
Directions:
Preheat oven to 350º. Grease 8" X 8" pan. Combine flour, sugar, baking powder and salt together in a bowl. Add lemon rind and mix lightly with a fork. Add butter and cut in finely. Stir in egg with a fork. Put 2/3 of mixture in prepared pan, spread evenly and pack down firmly. Spread with jam. Sprinkle remaining dry mixture over jam. Bake about 25 minutes or until well browned. Cool and cut in to squares.
