Green Bean-Cheese Casserole Recipe

1/2 stick of butter
4 oz. can mushrooms (drained)
1 onion, chopped
8 oz. Velveeta, cubed
1 can Cream of Mushroom soup
1 can water chestnuts, chopped
3 (or 4) cans green beans
Fried onions (optional)

Directions:
Directions:
Melt butter, saute onion and mushrooms until soft. Add mushroom soup, then Velveeta, and cook until cheese melts.

Meanwhile, drain green beans and water chestnuts (chop those). Spread green beans and water chestnuts in rectangular casserole dish. Pour soup/cheese mixture over the top of vegetables (may need to stir in a little).

Bake at 350º until bubbly. Add fried onions and cook for 5 more minutes.

This is my Mom's tried and true green bean casserole. We have both made it for holidays for years. I have made the casserole larger by adding more cans of green beans and maybe a little more butter and cheese.
