1 3/4 c. flour
1/4 c. powdered sugar
14 T. chilled unsalted butter, cut in small

1 1/2 c. sugar
2 T. grated lemon zest
1/2 c. lemon juice
1/3 c. flour
1/2 t. baking powder
powdered sugar for garnish

Crust: In large bowl, combine flour, sugar and butter. Beat at low speed 1 minute. Beat at medium speed 4 minutes until mixture forms coarse crumbs. Scrape bowl often. Press dough into ungreased 9x13 pan and bake at 350 degrees for 15 minutes until crust is firm but not brown.

Filling: While crust is baking, make filling. In small bowl, combine eggs, sugar, lemon zest and juice. Add 1/3 c. flour mixed with baking powder. Beat at low speed just until blended. Pour over hot baked crust. Bake at 350 degrees for 25 minutes until firm when lightly touched in the center. Cool in pan on a rack. Garnish top with sifted powdered sugar and cut in squares. Serves 24.
