1-8oz jar maraschino cherries
Water
1-3oz package cherry Jello
1-16oz can jellied cranberry sauce
1 T. lemon juice
1 cup whipping cream
3 T sugar
1/4 tsp. lemon rind (optional)
1/3 cup mayonnaise (do not use Miracle Whip)
1 T. lemon juice
1/3 cup chopped nuts
Colored Sprinkles or Sanding Sugar-Red (optional)

Directions:
Drain cherries. Save the syrup, adding enough water to make 1-1/2 cups liquid. Finely chop cherries and set aside. Put cherry liquids into saucepan. Bring to a boil. Add gelatin & stir until dissolved. Slowly beat in cranberry sauce & lemon juice. Chill until thickened; fold in cherries. Pour into a 8x8 glass casserole dish and freeze until firm. Whip cream, beating in sugar & lemon rind, until cream is stiff. Fold in mayo, lemon juice and nuts. Spread over frozen layer. Sprinkle with colored sugar if desired. Freeze. Thaw slightly before serving. Store leftovers in freezer and defrost in microwave.
