Zucchini Bread Recipe

3 eggs
2 cups sugar
1 cup oil
2 1/2 cups grated zucchini
3 T. vanilla
3 cups flour
1 tsp. salt
3 T. cinnamon
1 tsp. baking soda
1/2 cup walnuts (optional)
1/2 cup or more chocolate chips

Mix in a large bowl; eggs, sugar , vanilla, oil & zucchini. Mix dry ingredients in separate bowl. Add the dry ingredients to the wet. Mix well. Add the walnuts and chocolate chips. Put into 2 greased loaf pans and bake in a 325 oven for 1 hour and 15 minutes.
