3/4 c. vegetable oil
2 eggs
2 c. sugar
2 1/2 c. all purpose flour
1 tsp. soda
1 tsp. baking powder
1 tsp. salt
1 tsp. ground cinnamon
3 cups peeled, chopped apples
1 cups chopped pecans
1 6oz package butterscotch chips

Directions:
Combine oil, eggs and sugar in large mixing bowl. Beat at medium speed of electric mixer until well mixed.
Combine flour, soda, baking powder, salt and cinnamon; stir. Add dry ingredients alternately with apples to egg mixture, mixing well. Stir in pecans and half of butterscotch morsels. Spread batter into a greased 13 x9 inch pan. Sprinkle batter with remaining morsels. Bake at 350º for 55 - 60 minutes or until done.
