½ cup butter
2 eggs
1 ¼ cup sugar
1 cup sour cream
l teaspoon vanilla
2 cups flour (sifted)
1 teaspoon baking powder
½ teaspoon salt
Optional - 1 cup chopped dried apricots, or 1 cup raisins
½ teaspoon baking soda
Topping: 2 tablespoons sugar, l teaspoon cinnamon, ¼ teaspoon mace, 1 ½ tablespoons melted butter, 1 cup chopped nuts

Sour Cream Coffee Cake


Cream butter and sugar. Add 2 eggs and vanilla. Then add sour cream. Mix. Gradually add flour, baking powder, baking soda and salt. May also add some dried fruit or raisins (very good with chopped dried apricots- about 1 cup). Place batter in 9” square, greased pan. Prepare topping and sprinkle over batter. Bake at 350º for about 45 to 50 minutes or until done.
