Leaves (like crepes)
1 1/4 cups milk,
1 1/3 cups water,
2 eggs and
2 cups flour
Filling
1 lb. Ricotta cheese,
1/3 cup sugar,
1 egg yolk,
1/3 tsp. Vanilla

Directions:
Directions:
Leaves - In mixer beat eggs, add milk, water and then flour. Consistency should be that of loose batter.

Filling - Mix cheese, sugar, 1 egg yolk, 1/3 tsp. Vanilla - Mix thoroughly.



Place batter in teflon 6-7” fry pan, swirl over bottom and cook. Flip out onto dish towel.
Place large tablespoon of filing on each blintz and roll like crepe - folding sides in if desired.

You can freeze them at this point on cookie sheets and then place in bag when frozen - To cook fry in unsalted butter. Serve with sour cream and jam.

This makes about 22 blintzes which may be frozen.
