1 pastry lined pie pan(baked)
1 cup sugar
3 tbsp. corn starch
2 tbsp. cocoa
1/4 tsp. salt
1/4 cup milk
3 eggs, separated
2 cups milk
1 tsp. vanilla
1 tbsp. butter

Meringue:
3 egg whites
dash salt
1/4 tsp. cream tartar
1/4 cup sugar

Beat egg whites, salt and cream of tartar until stiff. Add sugar and beat until peaks form.

In 4 cup measuring cup or bowl, place sugar, corn starch, cocoa, salt and 1/4 cup milk. Stir until mixed well, then add egg yolks and rest of milk. Cook in microwave until thick, stirring 2 or 3 times. Usually takes about 5 or 6 minutes. Add vanilla and butter and return to microwave to melt butter. Pour into baked pie shell and spread meringue over top. Return to oven until meringue is lightly browned.

This same recipe can be used for Coconut cream pie, omitting cocoa and adding coconut, approximately 1/2 cup to 3/4 cup.
