3 eggs
2 c. sugar
1 c. salad oil
1 T. vanilla
2 c. flour
1 c. 3-minute quick oats
1 T. cinnamon
1 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
2 c. grated raw zucchini (peeled first)
1 c. chopped nuts

Beat eggs and sugar. Add oil and vanilla.
Mix in flour, oats, cinnamon, soda, salt and baking powder.
Add zucchini and nuts. Mix well.
Pour into two greased and floured 4 x 8 loaf pans.
Bake one hour at 350.
