Crust:
2 c. graham cracker crumbs
1/4 c. sugar
6 T. butter, melted
cooking oil spray

Filling:
2 1/4 lb. cream cheese, room temperature
1 T. vanilla
1 2/3 c. sugar
1 c. Bailey's Irish Cream
5 eggs, room temperature
1 c. semi-sweet chocolate chips

Coffee Cream:
1 c. chilled whipping cream
2 T. sugar
1 t. instant coffee powder

Directions:
Crust: Coat a 9-10" springform pan with spray. Combine crumbs, sugar and butter. Press in bottom and 1" up sides of pan. Bake at 325 degrees for 7 minutes or until light brown.

Filling: Beat cream cheese until sooth using electric mixer. Gradually mix in sugar. Beat in eggs one at a time. Blend in Bailey's and vanilla. Sprinkle 1/2 of chocolate chips over the crust and spoon in the filling. Sprinkle with remaining chips. Bake until puffed, springy in the center and golden brown, about 1 hour and 20 minutes. Cool completely before removing from pan.

Coffee Cream: Beat cream, sugar and coffee powder until peaks form. Spread over cooled cake and garnish with chocolate curls.
