4 T. Crisco shortening
1 c. brown sugar
1 can of sliced pineapple
1 jar of maraschino cherries

Batter:
1/4 c. Crisco shortening
3/4 c. sugar
1 egg
1 1/2 c. flour
1/2 t. salt
1/2 c. pineapple juice
2 t. baking powder

Directions:
Directions:
Topping: Melt shortening in bottom of 9" round cake pan. Add brown sugar and blend thoroughly. Spread evenly in pan. Arrange pineapple over mixture and place cherry in center of each slice.

Batter: Blend shortening with sugar and egg until fluffy. Add sifted dry ingredients alternately with juice to shortening mixture. Beat until smooth. Cover topping in pan with batter and bake at 350 degrees for 30 minutes. Turn out on platter while cake is hot. Serve warm with whipped cream.
