1 - pkg. goat cheese
fresh mint leaves

Directions:

Cut cantaloupe into slices as usual. Cut it into truncated pyramids; bite size pieces. Top with goat cheese. Top with fresh mint leaf and a toothpick. Enjoy!

Thanks for including us in your cookbook. If it is a genuine 1961 cookbook, it should contain Mama Dotson’s recipe for apple butter made with red hots. Red Hots were the power behind that pair of eights at right end for the Blue Knights (88 was Fungi’s number) My memory also says there were miles and miles of pinto beans, chow-chow, fried ‘tater cakes, cornbread and buttermilk. Karo syrup with butter and hot biscuits—Mrs. Dotson’s biscuits were the best I have ever had. My highest regards to the old gang - Jim.
