1 egg white
1/8 t salt
1 T instant coffee powder
3 T powdered sugar
1 c whipping cream
1/4 cup powdered sugar
1 t vanilla
1/8 t almond extract
1/4 cup finely chopped toasted almonds

Directions:
Directions:
beat egg whites until stiff. Fold in salt, instant coffee powder and gradually add 3 T of powdered sugar. Beat until stiff and satiny. Whip cream until stiff adding 1/4 cup powdered sugar, vanilla, and almond extract. Fold into first mixture along with toasted almonds. Spoon into glasses and place in freezer. Freeze until firm.

This was a desert that mom got on a kick making. It was a favorite of mine. I remember when we lived at Barker Cypress and I would go back to the back room where our spare refrigerator was and they would be in pretty glasses in the refrigerator. YUM sweet memory.
