2 cups raisins
2 cups water
1/2 cup sugar
2 tbsp flour
1/2 cup chopped nuts - optional
3 tbsp lemon juice
2 tsp grated lemon peel - I omit

Pastry for 2 crust pie

Directions:
Directions:
Preheat oven to 425º. Prepare pastry. Heat raisins and water to boiling. Cook 5 minutes. Stir together sugar and flour and stir into raisins. Cook over medium heat, stirring constantly until mixture thickens and boils. Boil and stir 1 minute. Remove from heat and stir in lemon juice, nuts and peel. Pour hot filling into pastry shell and cover with top crust. Bake 30 to 40 minutes or until crust is golden brown.
