2 cups milk
7/8 cup (1 cup less 2 tbsp) sugar
1/2 cup flour
1/4 tsp salt
3 eggs separated
1/2 cup medium cut coconut
1/2 tsp vanilla
2 tbsp butter
1 8" or 9" baked pie shell

Directions:
Directions:
In top of double boiler, mix dry ingredients. Scald milk by cooking in microwave on high for 3 minutes, then add to dry ingredients, stirring constantly over boiling water. Cook until thick, cover, and cook 5 minutes longer, stirring once or twice. Stir a little of hot mixture into beaten egg yolks, then return to double boiler, stirring quickly. Cook one minute longer. Remove from heat and add coconut, vanilla and butter. Mix well and pour into baked pie shell. Top with whipped cream and sprinkle with 1/4 cup coconut that has been toasted in the oven. Chill 4 hours and serve.
