1 lb. fresh green beans
½ medium red or yellow bell pepper
1 T. canola or vegetable oil
¼ cup low-sodium soy sauce
2 tsp. bottled minced ginger
freshly ground black pepper, to taste

Directions:
Directions:
Wash and trim green beans; cut into 2-inch-long pieces. Seed and chop bell pepper. Heat oil in wok or skillet over high heat. Add green beans, chopped bell pepper, soy sauce, ginger and pepper. Stir-fry until green beans are tender-crisp, stirring frequently, about 7 minutes. Serve hot. Makes 4 large servings (1 cup each).
