1 T. olive oil
1 medium red pepper, diced
1 medium onion, diced
2 gloves garlic, minced
1 tsp. ground cumin
1 15 oz. can of solid packed pumpkin
1 15 oz. can of black beans, rinsed
1 14 oz. can whole corn, drained
2 cups chicken broth
1 8 oz. can tomato sauce
1 tsp. chopped cilantro (fresh or dried)
salt and pepper to taste
sour cream

Directions:
Directions:
Saute red pepper and onion in olive oil about 5 minutes, until soft. Add garlic, saute another minute.
Add cumin, pumpkin, black beans, corn, chicken broth, tomato sauce, cilantro, salt and pepper.
Bring to a boil then simmer for 25 minutes.

Ladle into serving dish, add a dollop of sour cream, top with chopped cilantro.

Never used the sour cream and it was good non the less! Healthier.
