2 lbs. Snapping Turtle (aka 'alligator cooter')
trimmed,cubed (1")
4 c. tomatoes-chopped
4.25 c.H20..in portions
1 c. chopped red onion
1/2 tsp. NaCl(aka 'salt')
1/2 tsp.thyme
1/4 tsp.rosemary
1/2 tsp. black pepper 1 tbsp. lemon juice
2 tbsp. all-purpose flour
1/2 c. chopped parsley 1/2 c. sherry

Directions:
Directions:
-add meat,tomatoes,4 c.H2O,onions,salt,thyme,
rosemary,pepper and lemon juice to a 6 qt.
Dutch Oven
-bring to a boil over m/h heat,stirring
-reduce to low,simmer uncovered 2 &1/2hour,or
untilmmeat is tender.

-in a small bowl combine flour&1/4 c. H2O,blend
add to pot for thickening,add parsley and
sherry-serve
