1/2 c butter or margarine
1/2 c sugar
1/2 c brown sugar, packed
1 egg
1/3 c peanut butter
1/2 tsp vanilla
1/2 tsp baking soda
1/4 tsp salt
1 c flour
1 c quick-cooking oatmeal
*optional - 1 6 oz pkg chocolate chips

Frosting:
1 c powdered sugar
1/2 c peanut butter
4 - 8 Tbsp milk

Directions:
Directions:
Preheat oven to 350º. In a large mixing bowl cream the butter and sugars together. Add the egg and beat well. Then add the peanut butter, vanilla, soda, and salt. Mix well. Stir in the flour and oatmeal. This mixture will be very stiff! Spread into a greased 9 x 13 pan and bake for 20-25 minutes until done. (If you want the chocolate layer, immediately sprinkle with chocolate chips, allow them a few minutes to melt, and then spread over cooked bars.)

Frosting: Mix peanut butter and powdered sugar and 4 Tbsp of milk until smooth. Add additional milk, 1 Tbsp at a time until frosting is the consistency you want. Frost and serve.

I don't add the chocolate chip layer as I'm a peanut butter purist! These are good and easy.
