4 medium size potatoes
1 tsp vanilla
2 eggs
1 c milk
1 1/4 c sugar
Dash of salt
1/2 lemon juice and rind
1/2 c butter, melted
1/2 c chopped pecans

Directions:
Directions:
Mash potatoes. Beat eggs, adding milk, sugar, vanilla, and melted butter. Add lemon juice and grated rind. Add pecans. Coconut may be used instead of pecans. Pour into unbaked crust and bake at 350 for 35 minutes. Arrange halved pecans in a circle on top and bake for 5 mins.
