Glaze-
1/2 c ketchup or chili sauce
4 T brown sugar
4 T cider vinegar

Meat Loaf-
2 tsp veggie oil
1 medium onion
2 cloves garlic, minced
2 large eggs
1/2 tsp dried thyme
1 tsp salt
1/2 tsp pepper
2 tsp dijon mustard
2 tsp worchestershire sauce
1/4 tsp hot sauce
1/2 cup plain yogurt
1lb. ground beef
1/2 lb ground pork
1/2 lb ground veal
2/3 c crushed saltines (about 16 crackers)
1/3 c minced fresh parsley

7 slices thick cut bacon

1. For the glaze: mix all ingredients in a small saucepan, heat through; set aside.
2. For the meat loaf: Heat oven to 350 degrees. Heat oil in a medium skillet, add onion and garlic; saute until softened, about 5 minutes. Set aside to cook while preparing remainging ingredients.
3. Mix eggs, thyme, salt, pepper, mustard, Worchestershire sauce, hot sauce and yogurt. Add egg mixture to meat in a large bowl along with crackers, parsley, and cooked onion garlic mixture. Mix with hands until evenly blended and meat mixture does not stick to bowl. (if mixture sticks, add more yogurt, a few tablespoons at a time until mixture no longer sticks).
4. Turn meat mixture into a meat loaf pan with a perforated bottom and a drip pan underneath. This prevents the meat from cooking in its own grease. Layer with bacon, tuck bacon into the pan to pull the meat away from the sides. Brush with one quarter glaze. Bake for 45 minutes. Top with remaining glaze and cook another 15 minutes or until meat loaf registers at 160 degrees.
