1 lb. ground beef
1/2 C. chopped onion
1 pkg lasagna dinner mix (like Hamburger Helper but store brand is fine)
5 cups water
1 can (10 oz) of Ro-tel tomatoes and chilies (generic or store brand is fine also)
1 can diced tomatoes
1 can whole-kernel corn
1 tsp Italian spice mix
*optional - 1 small zucchini diced or sliced
2-3 Tbsp grated Parmesan cheese

Cook the ground beef and onion in a large saucepan until meat is browned. Drain. Add the seasoning mix from the package, water, tomatoes, corn and cheese. Bring to a boil. Reduce the heat, cover, and simmer for 10 minutes, stirring occasionally. Add the lasagna noodles (and zucchini if desired). Cover and simmer 10 more minutes or until the noodles are tender. Serve with a hearty bread and some cheese sprinkled on the top of the soup.

This soup is easy to "jazz" up. Adjust spices and seasoning to your taste. I often add a little garlic, some Worcestershire sauce, etc.
