2 c shortening
1 1/3 c packed brown sugar
1 1/3 c white sugar
4 extra large Eggs
1 tsp. coconut extract
3 tsp. vanilla extract
5 c flour
2 tsp. salt
2 tsp. soda
7 c angel flake coconut
1 lb. white chocolate, broken into chunks
1 to 1 1/2 lbs. Macadamia nuts

For the Cream mix 2 cups shortening, 1 1/3 cups packed brown sugar, and 1 1/3 cups white sugar together. Add in the 4 eggs, 1 tsp coconut extract, and 3 teaspoons vanilla extract. Blend well.
Sift together the 5 cups of flour, 2 teaspoons of salt and 2 teaspoons of baking soda 2 or 3 times. Add dry ingredients to creamed mixture and barely blend in.
Stir in the 7 cups of Angel flake coconut, 1 pound white chocolate, and Macadamia nuts by hand.
Lightly grease the cookie sheets and use an ice cream scoop to make dough mounds

Bake at 350 10-12 minutes. Do Not Over Bake.
