(4) Medium Boneless Skinless Chicken Breast
(1) Large onion (Make rings)
Low Sodium Soy Sauce
(1) Package of mushrooms (sliced)
(1) 12 oz. package of sliced Monterey Jack Cheese
(3) tbsps of light margarine

Directions:
Directions:
Mix (1) cup Soy Sauce and 1/2 cup water marinate the chicken for 2 hours
In a frying pan (3 ) tspn light margarine heated
saute onions and mushrooms with (1) tspn of soy sauce until golden brown Put on top of the chicken breast Cover all chicken and sautéed onions with mushrooms with Monterey jack cheese, Cover with foil Bake at 350 degrees for 25 minutes then uncover and cook for 10 more minutes to brown the cheese. Always check chicken to make sure it is fully cooked.
