1 tablespoon soy sauce
1 tablespoon rice vinegar
3 scallions, thinly sliced
1/2 teaspoon sugar
1/2 cup canned red salmon
1/4 carrot, shredded
2 tablespoons chopped water chestnuts
1/2 teaspoon grated peeled fresh ginger
16 round wonton skins; 2 teaspoons peanut oil

Directions:
To make the dipping sauce, combine the water, soy sauce, vinegar, scallions, and sugar in a bowl; set aside.

To make the pot stickers, mash the salmon and stir in teh carrot, ginger, and a few scallions, the water chestnuts, ginger, and remaining 1/2 teaspoon soy sauce, and 1/2 teaspoon vinegar until blended.

Place the wonton skins on a clean, dry work surface. Spoon 1 teaspoon of the salmon mixture into the wonton skin, and using water, fold over and seal the skins around the salmon.

Place the wonton skins on a clean, dry work surface. Spoon 1 teaspoon of the salmon mixture into the center of each wonton skin. Brush one-half of the edge of each wonton skin with water and fold over to seal, pressing the edges.

Heat 1 teaspoon of the oil in a large nonstick skillet over medium heat. Add 8 pot-stickers and cook, shaking the pan occasionally, until they are lightly browned on the bottoms, about 2 minutes. Turn over and cook about 1 minute.

These are good, and they are healthy..just 3 weight watcher's points for 4 pot stickers dipped in the sauce.
