3 eggs
1 cup corn oil
2 cups sugar
2 cups coarsely grated zucchini
2 tsp vanilla
3 cups flour
1 tsp soda
1/2 tsp baking powder
1 tsp salt
1 tsp cinnamon - rounded

Directions:
Directions:
Preheat over to 325º. Beat eggs, oil, sugar, zucchini, and vanilla. Sift flour, soda, baking powder, salt and cinnamon together (I just stir). Add to creamed mixture and blend thoroughly. Add 1/2 cup nuts if desired.

Pour into 2 greased loaf pans and bake for 1 hour.
