4 or 5 boneless, skinless chicken breasts
2 tbsp extra virgin olive oil
1 tsp salt
1/2 tsp pepper
2 tbsp flour
1 cup chicken stock
1 tbsp Dijon mustard
2 tbsp butter
2 - 3 cloves garlic
1 tbsp honey

Directions:
Directions:
Place chicken in baking dish and drizzle with oil. Grate garlic over top of chicken and dot with 1 tbsp butter. Season with salt and pepper. Bake at 400º. until done (approx 40 min.) remove from dish and set aside to rest (cover with foil). In a saucepan, melt remaining butter and add flour. Let cook for a few minutes. Then add any juices from chicken, along with stock. Over low heat, bring to a boil and cook until thickened. If too thick, add a little more stock. Add mustard and honey. Pour over chicken and serve.
