1 large sweet or Spanish onion or 2 medium cooking onions - chopped
3 small carrots - chopped
3 stalks celery - chopped
2 boxes beef or chicken broth
2 bay leaves
3 tbsp extra virgin olive oil

Any leftovers in the fridge.

Directions:
Directions:
Heat oil in sauce pan and add vegetables from above. Cook on medium heat until they are softened and onions are transparent. Season with salt and pepper and add broth. This is the basic recipe.

To this, add the bay leaves, 1 tbsp Italian seasoning, and 1 tsp dried parsley. Then add any leftovers you have. This can be corn, yellow or green beans, cold roast pork, beef, or chicken, leftover gravy, or any cooked veg you might have. I also add leftover rice, but you can add fresh rice, any pasta, egg noodles, or potatoes.

Simmer 1 hour and serve.
