2 green and/or red peppers
1 large onion
2 - 4 cloves garlic
1 cup chicken stock
1 can tomatoes (28 oz) - plain or seasoned
10 - 12 basil leaves or dried basil
1 lb spaghetti
2 tbsp butter
1/2 cup Parmesan cheese

Directions:
Directions:
In a large saucepan or stock pot, cook sliced peppers, onions and 2 - 4 cloves of garlic (crushed) for about 6 - 7 minutes, until tender.

Season with salt and pepper as desired and add chicken stock and tomatoes. Simmer for 4 - 5 minutes and then add basil (I use dried - 2 tbsp). Then lower temp and keep warm until ready to use.

Prepare spaghetti as directed on package. Drain and add butter, Parmesan cheese, and half the tomato sauce you just prepared. Toss.

Serve with additional sauce on top.
