Orange Pork

Ingredients:
5-6 lbs of pork tenderloin( I chop it into 2” pieces)
2Tblsp butter
SAUCE(I double this)
1.5 Cups chopped onions
3TBLSP grated orange peel
2 Cups orange juice
1 cup dry sherry
1/3 cup scant sugar
2 tsp salt
½ tsp pepper
2 bay leaves

Preheat oven to 325
Brown the pork in a pan on HIGH with butter, searing it. Set pork aside. Add a little more butter and the rest of the ingredients to the pan. Thicken the sauce for a few minutes. Pour over the pork (in a baking dish) and put on the bottom rack of the oven. Cook for 3 hours.

Chili rice side:
Make Uncle Ben’s for 6 cups(for easiest rice)
Mix one pint of sour cream, 1 can of chopped green chilis. Put ¾ lb of grated cheese on top and SERVE!!

To Indianize the pork recipe:
Add to the doubled recipe of sauce 1 can coconut milk, 1 Tblsp grated fresh ginger (or more), 1 Tblsp Thai red curry paste. I serve this with cilantro lime rice, IT ROCKS!
