2 lbs. ground beef
1 tbsp. shortening
1 cup onions, chopped
1 medium bell pepper, diced
1 1/2 tsp. salt
4 tsp. chili powder
1 14-oz. can diced tomatoes with chilies
2 15-oz. cans chili beans
1 8.5-oz. box cornbread muffin mix and ingredients listed to prepare

Directions:

Brown ground beef in shortening in a large pan. Add onions and bell pepper and cook until vegetables are crisp tender. Drain. Add salt, chili powder and tomatoes to beef. Simmer for 15 minutes or until hot. Add beans and mix gently. Pour into a 9 x 13 inch baking dish that has been sprayed lightly with PAM. Prepare cornbread mix as directed on package. Pour cornbread batter over hot ground beef mixture. Bake casserole at 425º for 20 minutes or until cornbread is golden brown.

Casserole should be hot before adding the cornbread batter to avoid bottom of cornbread being soggy after baking.
