1/2 lb macaroni, or your favorite small pasta shape
2 tbsp butter
2 tbsp flour
2 c lowfat milk
black pepper, to taste
1/3 c shredded Parmesan
1/3 c goat cheese
1 tbsp olive oil

Topping:
1/3 c Parmesan
2 tbsp breadcrumbs
1/4 tsp thyme
1/4 c goat cheese

Directions:
Preheat oven to 350ºF. Cook pasta. In a medium saucepan, melt butter over low heat. When melted, stir in flour and cook for 1 minute. Slowly add milk a little at a time, whisking to create a smooth sauce. Let cook 5-10 minutes or until thick enough to coat the back of the spoon. Add cheeses and stir until smooth. Season with pepper. Grease a baking dish, add cooked pasta and pour sauce over top. Stir gently to coat. In a small bowl, combine Parmesan, bread crumbs, thyme and pepper. Spoon over top, then sprinkle with goat cheese. Bake 25-30 minutes.
