Crust:
1 1/3 c flour
1/2 tsp salt
1/2 c Crisco
3 tbsp COLD water

Pie:
5 c sliced apples
1/2 c sugar
3/4 tsp ground cinnamon
apricot slices (I use about 2/3 can of apricots, sliced thinly--you could also use fresh, but the recipe may need more sugar)

Topping:
1/3 c sugar
3/4 c flour
6 tbsp cold butter

Directions:
Directions:
To prepare crust: mix flour and salt. Cut in Crisco until pea-sized chunks form. Sprinkle with water 1 tbsp at a time, tossing with a fork to form a ball. Roll out between layers of waxed paper. Flip into pie plate and form edges.

Preheat over to 400ºF. Combine apples, apricots, sugar and cinnamon. Allow to macerate while preparing topping.

For topping: measure flour and sugar into a bowl. Cut in cold butter. Fill pie crust with apple-apricot mixture and sprinkle topping over pie.

Bake at 400ºF for 35-40 minutes.

Sometimes I add 1/4 c of oats or nuts to the crumb topping for more crunch!
