Directions:
Directions:
Preheat oven to 300ºF. Place prime rib on an elevated roasting rack in a shallow pan. Pour 1/4" water in pan. Keep prime rib out of water.

Heat through until internal temperature reaches:

132ºF for rare
138ºF for medium rare
144ºF for medium
150ºF for medium well
155ºF for well

I cooked an 8.33 lb. roast for 3 hours in roaster pan and it came out perfect! 300ºF for first 1/2 hr., then lower to 250ºF for remaining time.
