1 1/2 lb semisweet chocolate (Ghiradelli bars highly recommended)
2 cups heavy cream
2 Tbsp unsalted butter
high quality unsweetened cocoa powder for dusting

Directions:
Directions:
Combine chocolate, heavy cream and butter in top pan of double boiler over simmering water (don't allow chocolate to become to hot).
When mixture is completely melted, remove from heat and whisk until all ingredients are well incorporated.
Line the bottom of a 9 inch spring form pan with waxed paper and pour mixture into it.
Let cool, cover and chill between 6 and 48 hours before serving. Unclasp spring form to remove tort. Invert serving platter on top of spring form. Flip pan, with one hand on top of serving platter and one hand under spring form.
Dust top of tort with powder. Slice onto plate and dust again. Serve with raspberries etc.
