1 cup sieved cooked potatoes
1 cup liquid from potatoes
3/4 cup vegetable shortening
1/2 cup sugar
1 tsp. salt
1 pkg yeast
3/4 cup warm water
2 eggs, beaten
5-6 cups flour

Directions:
Directions:
Mix potatoes, potato liquid, shortening, sugar & salt. Dissolve yeast in warm water; stir into potato mixture. Stir in eggs and enough flour so dough can be handled. Turn dough on lightly floured surface; knead until smooth and elastic, 5-8 min. Place in greased bowl; turn greased side up. Don't push down, cover; let rise until double, 1-1 1/2 hrs. Pat dough on lightly floured surface to 3/4 in thick. Cut doughnuts, let rise until double, 1 hr. Fry doughnuts in oil or shortening until golden brown. Drain on paper towel; glaze doughnuts while warm.
