2 cups zucchini, drained
3 eggs
2 cups sugar
1 cup oil
2 cups self rising flour
1 tbsp. vanilla
2 tbsp. cinnamon
1 cup chopped pecans

Directions:
Directions:
Beat eggs. Add sugar and oil. Add flour and cinnamon. Blend in remaining ingredients. Place in a greased and floured bread loaf pan. Bake at 350º for about 1 hour.

You can substitute grated squash in place of the zucchini if you would like.
