3 eggs
3 tbsp milk
1 3/4 cups sugar
4 tbsp flour
1 tsp vanilla
4 cups fresh rhubarb (approx 2 lbs.)
2 tbsp butter
milk
sugar
pie crust for 2 crust pie

Directions:
Directions:
Preheat oven to 400º. Beat eggs, milk, sugar, flour and vanilla in a large bowl just until well blended. Stir in rhubarb. Spoon filling into bottom pie crust and dab with butter. Cut remaining pastry top into strips and weave on top of pie. Pinch top and bottom crust together. Brush pastry with milk and sprinkle with sugar. Bake for 45 minutes or until pastry is golden brown.
