French Onion Soup Recipe

2 tbsp butter
3 med onions
1 tbsp flour
2 cups beef consomme
4 cups water
1/4 c scalded milk
salt and pepper to taste
2 ounces grated Swiss or Mozzarella cheese
6 slices French bread, dried
Melted butter

Directions:
Directions:
Melt butter in a skillet and add onions, stirring constantly until onions are golden brown. Sprinkle with flour and continue to cook until onions and flour are well browned. Add consomme and water and bring to a boil. Lower temperature and simmer for 20 minutes. Add scalded milk, and season with salt and pepper. Pour into individual dishes and add bread. Generously cover bread with cheese. Drizzle with melted butter. Place under broiler until golden brown.

* instead of French bread, I use regular bread toasted with the crusts removed. I don't drizzle with butter.
