1 can artichoke hearts in water, chopped
2 cups cooked rice
1/2 jar roasted red peppers, sliced
1/2 tsp thyme
1/2 tsp basil
1/2 tsp oregano
1/4 tsp pepper and salt
baby spinach leaves
6 to 8 flour tortillas
feta or goat cheese

Directions:
Directions:
1. cook rice
2. in electric skillet place artichoke hearts, roasted red peppers, rice, and seasoning.
3. place 1/4 cup mixture in each tortilla, 3 to 4 baby spinach leaves and feta or goat cheese and close wrap.

Makes 6 to 8 servings depending upon size of tortillas.
