1 oz dried porcini
2 3/4 lbs turkey breast (or your favorite parts
2 3/4 tbls butter
2 tbls olive oil
1 sprig fresh rosemary
1 garlic clove, thinly sliced
3 bay leaves
2 onions
2 celery stalks
4 carrots (all cut into bite size chunks)
1/2 tsp each marjoram, sage, thyme
(dried will work)
Salt and pepper
2 tbls all-purpose flour
1 can (14 1/2 oz) diced tomatoes
1 Cup chicken broth

Directions:

Preheat oven 400º
Soak porcini in water for 15 min. Remove and coarsely chop. Save the liquid. Cut meat into 2X3 in pieces.

Melt butter and oil together. Add meat and rosemary and browning on all sides.

Add garlic and bay leaves and cook until garlic is golden. Stir in vegetables. Sprinkle in herbs and salt/pepper.

Sprinkle in flour and stir until dissolved. Stir in wine, tomatoes, porcini and liquid and 1/2 the broth.

Bring to boil and transfer pan to oven. Bake uncovered for 35 min. or until turkey is cooked through. If sauce becomes too thick, stir in additional broth.

Remove bay leaves and rosemary before serving or remove them later from your mouth like we do.
