Tomato Sauce:
1 tbsp Olive Oil
1 small onion chopped
3 cloves garlic minced
1/4 tsp pepper
1 can (28 oz) crushed tomatoes

Breaded Chicken:
4 boneless chicken breasts
1/2 c breadcrumbs
1/4 c grated Parmesan cheese
1/4 c all purpose flour
2 eggs beaten
1 c shredded mozzarella cheese
3/4 lb spaghetti
1/4 c chopped fresh parsley (optional)

Directions:
Heat oil in saucepan over medium heat. Add onion, garlic and pepper; cook 3 - 5 minutes or until softened. Add tomatoes and stir to combine. Heat until tomato sauce comes to a boil. Remove from hear and set aside.

Trim all visible fat from chicken. Place beasts between two pieces of waxed paper and pound until 1/2 in thick.
In shallow dish, combine breadcrumbs and parmesan. Dip each breast into flour, then egg and finally in bread crumb mixture. Place on baking sheet. Bake at 400 F for 10 minutes.

Spoon 1/4 c of tomato sauce over each breast; sprinkle each breast with 1/4 c of mozzarella cheese. Bake 10 min or until cheese melts.

Meanwhile, in a large pot of boiling, salted water, cook pasta 8 - 10 min, or until tender but firm. Drain.

Toss pasta with remaining sauce and parsley. Serve with chicken.บบ
