1 cup water
1 cup sugar (use less if peaches are sweet)
3 cups fresh peaches, sliced
2 1/2 tbsp. cornstarch
pinch of salt
1/2 tsp. almond flavoring
yellow food coloring (optional)
2 1/2 tbsp. peach gelatin
1 tbsp. lemon juice

Directions:
Directions:
Mix sugar, salt and cornstarch. Add water and microwave for about 2-3 minutes stirring halfway through. Add peach gelatin and stir until dissolved. Add a few drops of food coloring and almond flavoring and stir. Set mixture aside on counter to cool. Fold sliced peaches (dipped in lemon juice and drained) into gelatin mixture when cool. Put in baked 9 inch pie crust and refrigerate until congealed.
