2 T olive oil
1 large onion chopped
1 lb. ground turkey or turkey sausage
2 T chopped garlic
1 red pepper chopped
1 green pepper chopped
1 jalapeno chopped
2 T chili powder
1 T fresh oregano (or 1 tsp. dried)
1 T ground cumin
1 T ground mustard
1 15-oz. can cooked pinto beans (rinsed and drained)
1 15-oz. can cooked black beans (rinsed and drained)
1 15-oz. can diced tomatoes
1 can Rotel tomatoes with chilies
1 15-oz.can chicken stock
Salt and pepper to taste

Garnish: Grated cheese, sour cream, avocado, hot sauce, black olives, and/or cilantro

Directions:
Add olive oil to a large skillet over medium heat. Add the onions and garlic and saute until soft and translucent. Add ground turkey and break up until the meat is browned. Cool slightly. Add remaining ingredients to the slow cooker, along with the cooked turkey mixture. Cook on low for 4-5 hours. Season with salt and pepper to taste.
